Thanksgiving Fest

Since we just started our 9th month of this pregnancy, the hubs & I decided that it was probably best that we didn't make the 5 hour drive to Rock Springs, Texas for the Moore Thanksgiving.  This year, we are having my parents over for an early Thanksgiving, so they can head to their ranch first thing in the morning.

This morning Mom & I have been in the kitchen cooking up a storm.  Menu for tonight-chicken & dressing (my mom's is the best dressing in the state), mash potatoes, gravy, 4 cheese mac-n-cheese, salad, and Dr. Pepper cake.


By request, here is the recipe for the Dr. Pepper Cake!


Cake Ingredients
1 cup butter
1 cup Dr. Pepper
3 tablespoons cocoa
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
2 cups sugar

Frost Ingredients
1 cup butter
3 tablespoons cocoa
6 tablespoons Dr. Pepper
1& 1/2 cups sifted confectioners' sugar


Preheat the oven to 350.
Cake:
-In saucepan, heat the butter, Dr. Pepper, and cocoa until boiling.  Remove from heat & cool.
-In mixing bowl, combine buttermilk, baking soda, vanilla, and eggs, mixing well.
-In a separate bowl, combine the flour and sugar.
-Combine all 3 mixtures until blended.
-Pour batter into a 9x13X2inch pan.
-Bake for 20-25 minutes.

Frosting:
-Combine butter, cocoa, and Dr. Pepper in a saucepan; bring to a simmer.
-Whisk sugar into mixture and remove from heat.

When the cake is done remove from oven and pierce hole throughout the cake with toothpick.  Then once cooled poor frosting over cake.




4 Cheese Mac-n-Cheese
Box of Velveeta Shell
2&1/2 cups grated sharp cheddar cheese, gueryere cheese, and parmesan cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons (1/2 stick) butter, cut into pieces
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon pepper

-Boil the pasta until tender & drain.
-In a sauce ban, mix butter and cheese; stir until cheese melts.
-Add sour cream, milt, salt, mustard, pepper, and eggs. Stir quickly & well so the eggs don't scramble.
-Put cooked pasta in baking dish, and pour cheese sauce on top & garnish with shredded cheddar cheese.
-Bake at 375 until golden brown.
